TECH SHEETS BWE 2014 BEAUNE 1er CRU ‘CLOS DES MOUCHES’ 2009 DOMAINE MICHEL ARCELAIN Michel and MadoArcelain have been working their domain in Pommard together since they were married in 1963. The domain is made up of parcels of vines inherited from both sides of the family and over a number of generations, as well as vineyards purchased by them over the years. These vineyards are all Pinot Noir of the highest quality, known as Pinot Fin. The selection of quality vines was primordial for the domain, and they have been cultivated like a garden since 1949. Even though the best-known Beaune 'Clos des Mouches' (from DomaineDrouhin) is a Chardonnay and sits on a pedestal on the world stage, most Clos des Mouches is red. The best known, and arguably the best parcel of vines on the slopes southBeaune, it can be either white or red. So put Michel Arcelain's perfect Pinot Fin vines in a vineyard of this caliber, and you get something special.For this tasting it is interesting to note that the Pommard ‘Les Pezerolles’ is spitting distance from Beaune ‘Clos des Mouches’ THE WINE Grape: Pinot Noir (Pinot Fin) Plot:exposed south and east Soil: marl and limestone with a little sand Pruning: Guyot simple Vine age: 50 years No weed killers, no fertilizers. Plowing to control undergrowth Hand harvest THE VINIFICATION Vinification: Traditional Totally destemmed Cold maceration 48 hours, light sulfur Vatting 6 days in open wooded vats Punch down and pump over during alcoholic fermentation Fermentation to Density 995, then transfer to oak barrels of varying age Total maceration approximately 25 days gently THE AGING Oak barrels, varying ages 1 racking before bottling Bottled after 24 months Bottling with light filtration

VOLNAY 1er CRU ‘CLOS DES CHENES ‘2005’ DOMAINE POTINET-AMPEAU The DomainePotinet-Ampeau is situated in the village of Monthelie in the southern part of the Cote de Beaune, between Meursault and Volnay. The domain is one of very few remaining who have a policy of holding vintages in their own cellars to allow them to age correctly before release. For this reason they can offer not only older vintages, but older vintages that have been perfectly stored. Volnay 1er Cru 'Clos des Chenes'. One of the best-known Burgundy vineyards of this generation. Here we have the 2005, a vintage known for great finesse. Interesting to see a Clos des Chenes from a great vintage as it starts to come of age, developing secondary aromas of spice and undergrowth. THE WINE Grape: Pinot Noir Plot: 1.6 acres in the prime sector, well-drained, exposed south and east Soil: brown soil on classic Jurassic limestone Pruning: Guyot simple Vine age: 30 years average No weed killers, plowing to control undergrowth THE VINIFICATION Vinification: Traditional Short cold maceration No added yeasts or enzymes Punch down and pump over during alcoholic fermentation Maceration after fermentations Total maceration 25 days gently THE AGING 20% new oak barrels, gentle toast 1 racking before bottling Bottled after 18 months Bottling with light filtration

POMMARD 1er CRU ‘LES PEZEROLLES’ 2005 DOMAINE POTINET-AMPEAU The DomainePotinet-Ampeau is situated in the village of Monthelie in the southern part of the Cote de Beaune, between Meursault and Volnay. The domain is one of very few remaining who have a policy of holding vintages in their own cellars to allow them to age correctly before release. For this reason they can offer not only older vintages, but older vintages that have been perfectly stored. Pommard has a reputation, forged in the 19th century, of being a massive beast of a wine. Time, terroir and oenology have combined to show us a much more subtle Pommard, a wine that is richer and at the same time more elegant than its caricature. This premier cru ‘Pezerolle’ is a perfect example. Sitting above ‘Les Epenots, below the excellent village parcel ‘Noizons’ and just to the south of appellation Beaune, this is elegant Pommard. THE WINE Grape: Pinot Noir Plot: 1.2 acres, white marl and limestone, exposed south and east Soil: white marl on classic Jurassic limestone Pruning: Guyot simple Vine age: 10 years average No weed killers, plowing to control undergrowth THE VINIFICATION Vinification: Traditional Short cold maceration No added yeasts or enzymes Punch down and pump over during alcoholic fermentation Maceration after fermentations Total maceration approximately 25 days gently THE AGING 20% new oak barrels, gentle toast 1 racking before bottling Bottled after 18 months Bottling with light filtration

NUITS ST GEORGES 1er CRU ‘DAMODES’ 2007 MARCHAND-TAWSE The collaboration of Pascal Marchand with another Canadian, Moray Tawse of the Tawse Winery in Niagara, one of Canada's most recognized wineries, gave birth to the new MaisonMarchand-Tawse in 2011. Les Damodes is a premier cru parcel just to the south of the range of the VosneRomanee 1er Cru, so there are similarities in style between the appellations. 'Supple' is not often a Nuits tasting note, but combine that with the expected elegance and stoniness, and it goes a way to explaining the prominence of Damodes in the hierarchy of this side of town. THE WINE Grape: Pinot Noir Plot: Hillside, east facing Soil: Clay and limestone Pruning: Guyot simple Date of Plantation: 1963 Yield: 24hl/ha THE VINIFICATION Vinification with whole clusters, lightly crushed Alcoholic fermentation starts spontaneously, but quickly One punch down per week Total maceration 18 days THE AGING 65% new oak barrels (Allier and Cher) 1 racking during aging period Bottled after 22 months without filtration or fining All aging operations are carried out according to the lunar calendar

GEVREY-CHAMBERTIN 1er CRU 2009 DOMAINE MAUME The DomaineMaume is a quasi-mythical producer of Gevrey-Chambertin, with excellent holdings in village, 1er cru and grand cru appellations. Gevrey is a complex subject, but a tasting through DomaineMaume's production will give you as good an overview of its unique terroir as any domain can. The DomaineMaumeGevrey-Chambertin 1er Cru bottling is always exciting. It is a blend of two parcels, 'Cherbaudes' and 'La Perrière', that are right in heart of the Grand Cru zone below MazisChambertin and Clos de Bèze, and next to Chapelle-Chambertin. The production is minuscule however. THE WINE Grape: Pinot Noir Plot: Blend of two plots Soil: Light and brown calcareous, with a little of gravel Pruning: Guyot simple Vine age: 60 years THE VINIFICATION Vinification: 100% destemmed Short cold maceration Punch down and pump over during alcoholic fermentation Maceration after fermentations Total maceration 20 days THE AGING 30% new oak barrels, gentle toast 1 racking during aging period Bottled after 18 months Bottling without filtration or fining All aging operations are carried out according to the lunar calendar

CHAMBOLLE-MUSIGNY 1er CRU ‘FEUSSELOTTES’ 2010 MARCHAND-TAWSE The collaboration of Pascal Marchand with another Canadian, Moray Tawse of the Tawse Winery in Niagara, one of Canada's most recognized wineries, gave birth to the new MaisonMarchand-Tawse in 2011. Chambolle-Musigny ‘Feusselottes’ is a focal pointChambolle premier crus. We talk of silk and lace. So it is interesting to see Pascal Marchand take on the delicate side of Burgundy, given his Pommard and Nuits experience, and his grip on earthiness. THE WINE Grape: Pinot Noir Plot: Located in the heart of the alluvial fan, the plot is just below the village of Chambolle-Musigny, close to Vougeot and on the top of 1er Cru Charmes Soil: Brown calcareous, deep with a lot of gravel Pruning: Guyot simple THE VINIFICATION Vinification: 20% whole clusters, lightly crushed; 80% destemmed Short cold maceration 2 punch downs per day during alcoholic fermentation Then short pump overs when fermentation stops until pressing Total maceration 23 days THE AGING 30% new oak barrels, gentle toast 1 racking during aging period Bottled after 22 months directly from barrels with filtration or fining All aging operations are carried out according to the lunar calendar
