Mince balls :  Mince balls INGREDIENTS 250-300 g minced meat ¾ dl breadcrumbs 1 dl water or milk ½ -1 onion (1 garlic) 1 egg ½ tsp salt ½ -1 tsp paprika some whitepepper RECIPE Join all other ingredients to breadcrumbs and liqvid. Mix the dough so long that it is smooth. Bake a long bar of the dough on a wet surface. Cut it into equal pieces and bake them into balls with wet hands. Put the mince balls on a baking sheet. Bake the balls in 225 °C 12 -15 min. Serve the balls with of baked potatoes. Oven fish:  Oven fish INGREDIENTS ½ kg fresh fillet of fish (e.g. salmon or whitefish) ½ tsp salt 2 dl creammilk RECIPE Oil the pan. Put the fillet in the pan skin side downwards. Put the salt on top of the fish and pour the cream. bake in 200 °C in the oven for about ½ h. SMACZNEGO... Rosolli:  Rosolli INGREDIENTS Rosolli 1-2 cooked beetroots 1 ccooked carrot 1 cooked potato ½ apple ½ gurkin ¼ onion some salt some whitepepper SAUCE 1 dl sour cream ½ tsp vinegar (10%) some salt some whitpepper same liquid of beetroots Serve with: Small pieces of pickled herring onionrins. RECIPE Cook the root vegetables and the potato the previous day and keep them in cold. Peel the root vegetables, potato and apple. Cut all the ingredients in the small cubes and cut the onion in the small pieces. Mix them in bowl and season carefully with salt and whitepetter. Add the spices into the sour cream and put the sauce in to a small serving bowl. Cut the pickled herring into small pieces and lay then on a plate. Decorate with thin onjonrings. Serve rosolli with sauce and herring on a sandwichtable. SMACZNEGO... Berry fruit soup :  Berry fruit soup INGREDIENTS 5 dl juice 2½ tbsp potato flour 2-3 dl berries (sugar) RECIPE Put the cold juice into a kettle. Add the potato flour and shake. Heat shaking well time all the with a bracket whisk until the mixture start boil. Take kettle ways from the stove and add the berries. Check the taste and when necessary put some more sugar. Pour the soup into a bole sprinkle a little bit of sugar on the top. SMACZNEGO... Macaroni Casserole :  Macaroni Casserole INGREDIENTS 3½ dl macaroni 1½ l water 2 tsp salt 300 g minced meat 1 onion ½ tsp salt ½ tsp white pepper ½ tsp paprika powder Egg- milk: ½ l milk 2 eggs ½ tsp salt ½ tsp basil RECIPE Cook the macaroni and drain it. Peel and chop the onion. Fry the minced meat in a frying pan, add the onion and spices. Mix the minced meat in the macaronoi and spread the mixture into a baking dish. Mix the milk, eggs, salta and basil together and pour over the meat and macaroni mixture. Bake in the oven 175 °C for about 40 min. If you like, you can sprinkle the top with breadcrumbs before baking. SMACZNEGO... Mashed potatoes:  Mashed potatoes INGREDIENTS 6-8 potatoes (about 7 dl of peeled slices) 3 dl water ½ tsp salt 1-1½ dl milk RECIPE Wash, peel and cut the potatoes into slices. Measure the water into a kettle and heat until water boils. Add the potato slices and boil them under the lid for about 20 min. Pour the water away. Mash the potatoes with an electric mixer. Add salt and milk until it's good. If you want you can heat the milk before adding. Mix the potatoes until the mixture is smooth and check the flavor. SMACZNEGO... Poor knights (or Rich knights) :  Poor knights (or Rich knights) INGREDIENTS 4-8-toasts or slices of bun 2-3 dl milk 1 egg (1 tsp vanillasugar) 1 tsp wheatflour For frying: butter RECIPE Mix the egg, milk, sugar and flour in a bowl. Dip toast or slices fo bun into the milkmixture. Put some buter on the frying pan and fry the slices goldbrownon both sides. Serve warm slices with jam and berries. For Rich knights: Serve the slices with jam ans whipped creamn. SMACZNEGO... Salmonsoup:  Salmonsoup INGREDIENTS 5 pepper ½ -1 onion 3-4 potatoes ½ tl salt 200 g piece of salmon (2 tbsp cream) Ontop: till or chopped chives 5 dl water RECIPE Chop the onion. Wash, peel and cut the potatoesin cubes. Put them into the boiling water and boil for 5-10 min. Add the salt and choped the salmon. Boil yet for about 10 min. Add cream if you want. Check the flavour. Sprinkle till or chopped chives ontop. SMACZNEGO... Chanterelle Soup :  Chanterelle Soup INGREDIENTS 3 tbsp butter 50 ml Chopped onion 400 g fres chanterells, chopped (or 150 g canned) 3 tbsp plain flour 800 ml vegetable stock 200 ml whipping cream same salt 50 ml choppes parsley RECIPE Sweat the onion and mushrooms in butter. Stir in the flour. Pour in the vegetable stock, continuously stirring. Simmer for 15 min. Add the seasoning and cream. Bring to the boil. Sprinkle the parsley on top just before serving. Serve with toast and butter. SMACZNEGO... Finnish Pancakes :  Finnish Pancakes INGREDIENTS 300 ml milk 2 eggs 200 ml plain flour 2 tbsp oil or melted butter salt (sugar) For frying: butter or oil RECIPES Pour the milk into a bowl. Add the flour and seasoning. Mix until smooth. Add the eggs and oil or the melted butter, slightly cooled. Heat the grease in a frying pan and pour in some butter. Cook the pancake until set and golden-brown. Flip the pancake over and cook the other side. Serve with jam, whipped cream, berries, cinnamon and sugar, honey or maple syrup. For a salty version you can also add 100 ml fo either blanched spinach, grated carrot or potato. SMACZNEGO... Karelina Rice Pasties with Egg and Butter Spread :  Karelina Rice Pasties with Egg and Butter Spread INGREDIENTS (for 25 pasties) For rice mixture: 500 ml water 2 tbsp butter 250 ml short-grain glutinous rice 1 l milk 1½ tsp salt For Rye dough: 400 ml rye flour 150 ml plain flour 1 tsp salt 200 ml water To glaze: 50 g butter 100 ml milk For egg and butter spread: 100 g butter 3 hard-boiled eggs, mashed 50 ml chopped parsley RECIPE Put the water and butter in a saucepan. Bring to the boil and stir in the rice. Simmer for 10 min. stirring occasionally. Add the milk and stir until boiling. Simmer for about 50 min. until the rice is done. Season with salt. Set aside to cool. Mix the flours, salt and water togeter. Knead into a dough. Roll the dough on a floured surface until about 2 mm thick. Roll the circles into thin crusts. A pasta machine can also be used. Use flour to help in the rolling. Fill the crusts with thin layer of the rice mixture. Turn in 1 cm fo the side to create an edge and pinch the edges. Bake the pasties in a 300 °C oven for 15-20 min. Brush with butter and milk mixture and transfer to soften under a greaseproof paper and towel. Eat hot with egg and butter spread. Egg and butter spread: Mix the soft butter with eggs and parsley. Serve at room temperature SMACZNEGO... Rye Bread:  Rye Bread INGREDIENTS SOURDOUGH ROOT: 3 slices rye bread, without crusts (or 1 tbsp sourgough) 1 l water 1 l rye flour THE NEXT DAY 30 g fres yeast, dissolved in water 2 tbsp salt 1½ l flour RECIPE Cruble the bread and put into a large mixing bowl. Pour in the warm water and mix. Stir in the rye flour. Cover the bowl with a cloth and leave the dough foot to stand at room temperature for 24 hours, until bubbly and pungent. Add the salt and yeast. Add the rye flour and kneed until smooth and firm. Let the dough rise until doubled. This takes longer than ordinary yeast bread. Divide the dough into 3 pices and leave a small part for the next dough. (Use that as the sourdough root. Freeze it and soak in warm water, then proceed as normal according to the recipe.) Shape into loaves and allow it rise under a cloth. Bake in a 200 °C oven for about 1 hour. SMACZNEGO... Traditional Potatoe Casserole:  Traditional Potatoe Casserole INGREDIENTS 1,3 kg mąki ziemniaczanej Water 50 g butter 1½ tbsp plain flour 300-400 ml milk 1½ tsp salt RECIPE Scrub the potatoes and boil them in unsalted water until done. Peel them while hot and mash them together with the butter. Allow to cool. Stir 1/2 tbsp flourinto the mash. Allow stand, covered, for few hours at room temperature. Add the rest fo the flour intermittently into the mash, mixing well. Add enough milk to make a loose mash. Season with salt. Pour the mixture into either a single greased 2-litre ovenproof dish or two smaller ones. Leave enough room on the sides. Bake in a 150 °C oven for about 3 hours. SMACZNEGO... Thick Stewed Rhubarb Soup:  Thick Stewed Rhubarb Soup INGREDIENTS 250 g świeżego rabarbaru 250 g fresh rhubarb 6 dl water 1 dl mixed fruit and berry juice ½ dl sugar small pinch fo salt 4 tbsp potato flour RECIPE String the rhubarb and cut into small pieces. Bring the water, juice, sugar, salt and rhubarb to the boil. Mix the potato flour in a small drop of water and pour it in a steady trickle into the rhubarb stew, beating all the time. Allow to rise up in the pot once or twice. Pour into a dish and cover with cling film. Chill quickly. SMACZNEGO... Bun dough:  Bun dough INGREDIENTS 2½ dl milk 25 g yeast 1 egg ¾ tsp salt ¾ dl sugar 1-2 tsp cardemom 6-7 dl wheat flour 75 g butter or ½ dl oil greasing: egg RECIPE Warm up the milk luke warm and crumble the yeast into it. Mix it well with a wooden fork. Whip the egg, salt, sugar, cardemom and most of the wheat flour into it. Add wheat flour and mix with your hand or a machine. Add room-temperature butter in the end and knead the dough soft and firm. Cover the dough with a cloth and put it in a warm place. Let it double in size. After that the dough is ready to be beked.
