Fats are the most concentrated source of energy (calories) in the diet. In nature, fats are found in both animal and vegetable sources. All dietary fats consist of three basic types of fatty acid: (1) saturated; (2) mono unsaturated; (3) poly unsaturated. Saturated fat raises blood cholesterol levels. Mono unsaturated fat may indirectly lower blood cholesterol levels. Poly unsaturated fats are known for their ability to reduce blood cholesterol levels.

Introduction: Canada is one of the most important rapeseed producing countries internationally, next to India and China. France, Germany and Sweden are main producing countries in Europe. From a nutritional point of view, rapeseed oil once posed certain physiological and toxic problems, owing to the presence of high concentrations of erucic acid. Nowadays, Canola usually contain less than 0.5% erucic acid, and the upper limit has been tightened by the Codex Alimentarius Committee to 2 % maximum.

Introduction:

Canada is one of the most important rapeseed producing countries internationally, next to India and China. France, Germany and Sweden are main producing countries in Europe.

From a nutritional point of view, rapeseed oil once posed certain physiological and toxic problems, owing to the presence of high concentrations of erucic acid.

Nowadays, Canola usually contain less than 0.5% erucic acid, and the upper limit has been tightened by the Codex Alimentarius Committee to 2 % maximum.

New cultivars were developed initially in Canada that eliminated these undesirable components (tabulated below), and in 1978 they were given the name Canola . Several of these developments have important implications for the canola industry: Recommended that dietary fat be reduced to 30% and saturated fat to <10% of the total energy in the diet; Monounsaturated fatty acids are as effective as polyunsaturated fatty acids in lowering blood cholesterol; Omega-3 fatty acids are essential nutrients and that they may help prevent coronary heart disease.

Fatty Acid Composition Canola Oil is characterized by a very low level of saturated fatty acids, a relatively high level of mono-unsaturated fatty acids and an intermediate level of polyunsaturated fatty acids, with a good balance between the omega-6 and omega-3 fatty acids. Studies over the past 15 years have shown dietary oleic acid is equally as effective in lowering plasma cholesterol level as dietary polyunsaturated fatty acids. Humans and other species are able to synthesize oleic acid so it is not required in the diet.
