 Biofilm is a collection of bacteria encased in extracellular polymeric substance (EPS). It can be also referred as slime. A biofilm is an aggregate of microorganisms in which cells adhere to each other on a surface. A biofilm is a protective matrix produced by, and containing, bacteria which stick to surfaces and represent a constant source of contamination in the agri-food industry.   Many industrial companies struggle with biofilm. Biofilms are highly resistant to traditional cleaning and disinfection protocols. Once they reach maturity, they will release into the system, contaminating the whole facility.

 Biofilm formation occurs step by step, such as  Initial attachment  Irreversible attachment  Maturation I  Maturation II  Dispersion  Biofilms are composed of  Microbial cells  Polysaccharide compounds  Uronic acids etc.

 Biofilm can develop anywhere, but its most often found in locations that are tough to clean. Biofilms have very strong chemical resistance, making them a very tough cleaning challenge.  Biofilm can form on different surfaces, including  Stainless steel  Polystyrene  Polyester  Rubber  Copper

 Environmental factors that affect the creation of biofilm in food processing are  Nutrients  Acidity  Temperatures  Moisture  Oxygen  Time   Biofilm is the indication of the area is unsanitary and needs to be properly cleaned. Biofilm are recognized to be a critical and hard to remove source of contamination because they are extremely resistant to cleaning and sanitation procedures.  Bacteria form biofilm to protect themselves from heat, light, drying, chemicals and cleaning.

 Biofilms can be removed by  Formulations and concentrations of cleaning and sanitizing agents  Exposure time  Temperature  Mechanical activity   Chemicals used for removal of biofilms are  Caustic soda  Sodium  Chlorine etc.   Traditional products can not solve biofilm / unit make, by mechanical force may well be a part of the biofilm to be removed. 

 The Novozymes enzymes used in the Biorem product line act specifically on the EPS that forms the structure of the biofilm, degrading it and allowing the detergent to remove the biofilm. This enables the subsequent disinfectant step to reach all the way down to the exposed bacteria and kill them.  The biofilm is completely pulled away from the surface and finds itself in the solution. It will be removed from the facility with the cleaning solution. The micro- organisms, now unprotected, will be killed during the disinfection stage.
