This is simple recipe for St. Patricks Day by a friend and contributor Melanie Edjourian.

Beef and Ale - Guinness Pie Author: Melanie Edjourian of Ingredients:  700g cubed beef  2.5 tbsp plain flour  Approximately 3 2.5 tbsp vegetable oil  2 large white onions sliced  300g mushrooms sliced  50ml water  4 tbsp tomato puree  ½ tsp garlic powder  300ml water  2 beef stock cubes  1.5 tbsp dried mixed herbs  Black pepper to taste  400ml dark ale or Guinness  1 medium egg beaten  Flour for rolling out the pastry  300g ready-made puff pastry

Step-By-Step Instructions: Coat the beef with the flour. Put half of the vegetable oil in a large non stick pan or wok with half the beef and seal the beef until browned nicely. Repeat with the remaining oil and beef. Put the beef in a separate bowl and using the same pan cook the onions and mushrooms together with 50ml water until the water evaporates then add the beef back into the pan. Add the tomato puree, stock cubes, herbs, ale/ Guinness and 300ml of water, bring to the boil then lower to a simmer and leave it uncovered for approximately 2 hours, stir occasionally. Flour your work surface and roll out the pastry so that it is large enough to cover your pie dish. Add the beef mixture into the dish then brush the side of the dish with a little of the beaten egg. Cover with the pastry then press it down well around the rim of the dish and remove excess. Pinch the edges of the pastry to make it look pretty. In the centre of the pie make 2 slits then coat the pastry with the rest of the beaten egg. Place in a preheated oven at 220 degrees, fan 200 degrees and cook for up to 20 minutes until the pastry is a golden colour. For more delicious recipes, please visit:
