Introduction  Norman Ebenstein owns and operates the Eden Center, a Virginia shopping plaza that has become a leading Vietnamese and Asian cultural center. Under Norman Ebenstein's guidance, the Center hosts a variety of traditional Asian food and product vendors, including bubble tea shops.

About Bubble Tea  A staple beverage in Asian countries and an increasingly popular trend in the United States, bubble tea originated in Taiwan in the 1980s. Introduced to the public at Chun Shui Tang teahouse, bubble tea is said to be the invention of a product developer named Lin Hsiu Hui. Company lore holds that Ms. Hui introduced tapioca balls into her iced tea drink at a staff meeting, and it quickly became a top seller for the teahouse.

Conclusion  Just over a quarter century later, bubble tea is sold by street vendors across Taiwan and throughout neighboring countries. It has also made its way to the West and is available in a variety of flavors and levels of sweetness. Regardless of where it is made, it is traditionally served in a clear cup with a straw wide enough that the tapioca balls can be eaten as the tea is being sipped.
